Ingredients
- Two 14-ounce cans of coconut milk (Lite or full-fat)
- 4 cups vegetable broth (or 32-ounce container)
- 1 piece fresh ginger
- 1 teaspoon grated lemon peel
- 14. ounce hard tub out of tofu, cubed
- 1 cup mushroom criminy, sliced
- 1 cup cubed tomatoes
- 4 Thai Chili (or any hot chili peppers), finely chopped, optional
- 2 tbsp maple syrup
- 1 ½ tbsp lime juice
- 1 teaspoon salt or to taste
- 2 tbsp fresh cilantro, chopped
- Grate lemon peel in a small dish and set aside. Be careful not to grate at the core of white lime as this will cause your soup to be bitter.
- Use a medium bowl, combine coconut milk and vegetable broth, ginger and lemon peel and bring to a boil. Reduce heat, cover and simmer on medium for 10 minutes, stirring occasionally.
- Add tofu, mushrooms and tomatoes and chilies. Bring to a boil, cover, reduce heat and simmer for 10 more minutes.
- Remove from heat, add the maple syrup, lemon juice, salt, and mix well. Add fresh coriander before serving.
